Châine History The Chaîne des Rôtisseurs, an international gastronomic society, founded in Paris in 1950, traces its origins back to 1248. At that time, the French King Louis IX (later canonized as Saint Louis) wishing to thank the trades which had contributed to the construction of Sainte Chapelle, ordered the establishment of several professional guilds, one of which was the Oyeurs or goose roasters. The vocation of this guild was to improve the technical knowledge of its members: apprentices, tradesmen and masters. Over the decades its activities and privileges were expanded. By 1509, during the reign of Louis XII, when the guild s knowledge was extended to include the preparation of other meats and poultry, including game, it took the name Rôtisseurs (roasters). Then in 1610, under the reign of Louis XIII, it was granted a Royal Charter and a Coat of Arms. For more than four centuries the Confrérie des Rotisseurs cultivated and developed the culinary arts, meeting all the requirements of professionalism and quality demanded by the Royal Table, until 1793 when the guild system was dissolved during the French Revolution. The Rôtisseurs were completely forgotten until 1950, when Dr. Auguste Bécart, the well-known journalists Jean Valby and Curnonsky (elected Prince of the Gastronomes ), and chefs Louis Giraudon and Marcel Dorin revived the association and founded the. A Chaine des Rotisseurs 5 évszázadon keresztül gyakorolta és fejlesztette a konyhaművészetet, ám 1793-ban a francia forradalom ezt a nemes hagyományt megszüntette, az egyleteket pedig feloszlatta. A második világháború után, 1950-ben öt francia connaisseur, Curnovsky, Bélcart, Valby, Giraudon és Dorin urak Párizsban felélesztették a régi hagyományokat és újjászervezték a Chaîne des Rôtisseurs Egyesületet. Baráti kapcsolataikon keresztül elindították a Világszervezet működését mind az öt kontinensen. A Chaîne des Rotisseurs Világszervezetté fejlődött és jelenleg mintegy 126 országban tevékenykednek Chaîne Nemzeti Egyesületek a Párizsi Központ irányítása alatt. A Világszervezet célja elsősorban a konyhaművészet továbbfejlesztése és a minőségi étel és ital kultúra terjesztése. Az Egyesület jelvénye a címerpajzson belül a tüzet jelképező piros alapszínben két egymást keresztező nyársat ábrázol, utalva a húsok sütésének ősi módjára. Az Egyesület tagjai (amatőr és professzionista) különböző rangokat, illetve ennek megfelelő szalagokat lánccal kapnak belépéskor, illetve előléptetések alkalmával, melyeket a Nemzeti Egyesület vagy a Világszervezet rendezvényein, az ünnepélyes eseményeken viselnek. Magyarországon a Chaîne des Rôtisseurs Baráti Asztaltársaság alapítását 1990. január 2.-án hagyta jóvá a Fővárosi Bíróság 6. Pk. 60907/2. számon. 4 26-29. September 2013. 5
Buda Castle The Buda Castle District has been a World Heritage site since 1987. The Castle Hill, which gives home to the district, is riddled with miles of caverns and cellars, including the remains of numerous hiding places and storage facilities. Its main building, the Royal Palace accommodates cultural institutions and museums, including the National Széchenyi Library, the Hungarian National Gallery and the Budapest History Museum. The Fisherman s Bastion was built in 1903, which is one of the symbols of the capital together with the famous Mathias Church. Buda dates back to the time of the Hungarian conquest of the Carpathian basin. However, it became important and developed a lot under the reign of King Béla IV (1235-1270), following the Mongol invasion of the country. Observing that the Mongol hordes were unable to conquer the hilltop stone castles, the king encouraged the nobility to build castles all around Hungary. This was the time, after 1240, when the first walls of Buda have been built. During his reign, Germans, Italians and French have been living in the district, who brought their culture with themselves. Their skills apparently made great influence on improving and developing arts and crafts. The Royal Court was moved from Visegrád to Buda in 1347 by the Anjous who started to construct extensions in gothic style, turning the palace into the seat of the country. During the reign of Mathias Corvinus the castle was redesigned in renessaince style and the palace became one of Europe s most wonderful courts. The Palace and Castle District gained the present look after the unification of Buda, Óbuda and Pest (1873) which involved construction works and new settlements for the millenium. A Budai vár, a várnegyed 1987 óta a világörökség része. Páratlan látványával, évszázados történelmi és műemlékeivel országunk egyik büszkesége. A Várhegy, amelyre épült, több kilométeres barlang- és pincerendszert rejt, búvóhelyek, raktárak nyomaival. Legfőbb épülete, a Budavári Királyi Palota kulturális intézményeknek és múzeumoknak ad otthont, itt található egyebek mellett az Országos Széchenyi Könyvtár, a Magyar Nemzeti Galéria és a Budapesti Történeti Múzeum. A középkori várfalakon 1903-ban épült meg a neoromán Halászbástya, mely a mögötte álló Mátyás templommal együtt a város egyik szimbólumát jelenti. Buda egyidős a honfoglalással, ám csak IV. Béla (1235-1270) uralkodása idején, a tatárjárást követően indult fejlődésnek és vált fontossá. Mivel a király felismerte, hogy a mongolok a hegyre épült erődítményeket nem tudják elfoglalni, országszerte várakat építtetett így épült meg 1240 után Buda várának első épülete. Uralkodása alatt többek között németek, olaszok és franciák találtak otthont a budai Várnegyedben, akik magukkal hozták kultúrájukat is, ez nyilvánvalóan befolyásolta a város művészetének és kézművességének fejlődését. Az udvar az Anjouk idején, 1347-ben költözött Visegrádról Budára, ekkor kezdték meg a vár palotává bővítését gótikus stílusban, és ekkor vált Buda az ország székhelyévé. Mátyás király uralkodása alatt a budai Várkastélyt reneszánsz stílusban építették át és Európa egyik leggyönyörűbb rezidenciájaként tartották számon. A török hódoltság idején Buda megtartotta vezető szerepét, de szépségéből sokat vesztett. Mai arculatát a Budavári Királyi Palota és a Várnegyed végül Buda, és Pest 1873-ban történt egyesítése után, a millenniumi építkezések során nyerte el. 6 26-29. September 2013. 7
Danube Cruise The ship is safe enough in the port, but this is not the reason why they are built. Paulo Coelo The ship Roham was built in 1895 as a screw propelled steam tug and was given the name Victoria. Then she was renamed to Roham, but was also known as FK311 during the course of her life. Having borne so many names implies already a long and lively history, shadowed by tragedies. People built it, reconstructed it, sold it and bought it, several people steered it and were on duty on its board, it even sank in 1944 owing to a bomb attack. Its engines were removed in 1992 and later the ship itself was deleted from the official ship register, but this ship was built in Budapest, in the workshops of the United Schoenichen-Hartmann Ship-building Yard, Machine and Boiler Works. Many of the emblematic ships of Hungary derive from this famous workshop, like the also active Kelén passenger ship on Lake Balaton, also built as a steam ship originally, or the Ferencz József and Queen Elizabeth steam passenger ship. The first ship-builders deserve great appreciation, as experts were amazed by the almost perfect condition of the iron plates and rivets of the hull during a meticulous and precise examination of the ship preceeding the commencement of its reconstruction. Emboldened by this observation, the Sleeping Beauty woked up in 2009. During the reconstruction, great emphasis was laid on preserving the authentic style and special characteristic of excursion boats popular at the turn of the 20th century, and on harmoniously combining these features with modern technical requirements. Thus Roham has been converted to a unique-looking, nicely rebuilt passenger ship with an elegant and warm atmosphere offering high quality catering services. A hajó nagyobb biztonságban van a kikö tőben, de a hajókat nem azért építik Paulo Coelho A Roham néven ismert hajó 1895-ben épült gázüzemű csavaros vontatónak és a Victoria nevet kapta. Majd átnevezték Rohamra és ismert volt FK311 néven is. Ennyi név mögött egy hajó életében hosszú, szövevényes, nem ritkán tragédiákat is sejtető történetek állnak. A hajó tulajdonosai többször változtak, átépítették, kapitányai és személyzetei számos alkalommal cserélődtek. A második világháború alatt, 1944-ben bombatalálat érte és elsüllyedt. Kiemelték az elsüllyedt hajót, majd 1992-ben kiszerelték a motorokat is, hat évvel később pedig törölték a hivatalos hajólajstromból. A hajó Budapesten a Schoenichen- Hartmann-féle Egyesült Hajó-, Gép- és kazángyár műhelyeiben épült, innen került ki Magyarország több emblematikusabb hajója is, mint a szintén aktívan működő Kelén balatoni személyszállító egykori gőzös és a hajdani Ferencz József és Erzsébet Királyné gőzösök is. Az első építőket dicséri, hogy a felújítás megkezdése előtt a hajótest rendkívül precíz átvizsgálása és ellenőrzése során a szakemberek elámultak a több mint száz évvel ezelőtt készített vaslemezek és a szegecselések szinte hibátlan állapotán. Az ellenőrzés pozitív eredményeit látva 2009-ben újjáépítették és felébresztették Csipkerózsikát. A jelenlegi tulajdonos nagy hangsúlyt fektetett az 1900-as évek elejére jellemző kiránduló hajók kedvelt, sajátos stílusjegyeinek megtartására, és azoknak a modern technikai elvárásokkal történő harmo nikus ötvözésére, beleértve magas színvonalú konyhai felszerelések beépítését is. 8 26-29. Parliament The Hungarian Parliament is a source of Hungarian national pride and the symbol of the state, as well as one of the largest and most famous buildings in Budapest, home to the National Assembly of Hungary and its many bodies. This imposing structure dominates the bank of the Danube as if it had always been there, even though it was only completed little more than a hundred years ago. Not only is it an amazing spectacle, it has an impressive size as well: the building is 268 metres in long and 118 metres wide, with a floor space of 17 thousand square metres. The central feature of the building is its dome, which connects the two wings, the House of representatives and the Upper House. Its main facade overlooks the river, whilst the main entrance opens to Kossuth Square. The Holy Crown and the coronation insignia are kept under the dome. Many considered the plan a neo-gothic building with a number of baroque elements that Imre Steindl had dreamed of far from the Hungarian taste, but the architect argued, that since Hungary didn t have a typical national architectural style of its own, the gothic style could appropriately express the spirit of the Parliament. Forty million bricks, over half a million decorative stones and forty kilogramms of gold were used in the course of the construction which started in 1885. The country s best skilled craftsmen worked on the building s wrought iron gates, chandeliers, frescoes and statues. The construction was concluded in 1904. Az Országház nemzeti büszkeségünk, államiságunk jelképe, Budapest egyik legnagyobb, legszebb és legismertebb épülete. Otthont ad az Országgyűlésnek és intézményeinek, ezért Parlamentnek is hívják. Úgy terül el a Duna-parton, mintha mindig is ott lett volna, noha alig több mint száz éve épült. Nemcsak látványa, mérete is tiszteletet parancsoló, 268 méter hosszú, 118 méter széles, alapterülete 17 000 m2. Az épület központi eleme a kupola, amely összeköti a két szárnyat, a képviselőház és a főrendiház egykori helyét. Fő homlokzata a folyó felőli oldalon van, a főbejárat viszont a Kossuth térről nyílik. A kupolacsarnokban őrzik a Szent Koronát és a koronázási ékszereket. A Steindl Imre által megálmodott barokk jegyeket is tartalmazó neogótikus épület terveit sokan magyartalannak találták, de az építész úgy védekezett, hogy nincs sajátosan magyar építészeti stílus, a gótika pedig alkalmas az országház eszmeiségének kifejezésére. Az 1885-ben indult építkezésen 40 millió téglát, félmillió díszkövet, 40 kg aranyat használtak fel. A kovácsoltvas kapukon, a kandelábereken, a freskókon, a szobrokon a kor legjobb magyar mesterei dolgoztak. Az építkezés 1904-ben fejeződött be. 10 26-29. September 2013. 11
Grassalkovich Palace, Gödöllő Gödöllő, which has been a part of the royal hunting areas for centuries, lays on the bank of the small Rákos-stream, in the Valley of Gödöllő Hills, 30 kms from Budapest. Gödöllő a Rákos-patak partján, Budapesttől 30 kilométerre, a Gödöllői-dombság völgyében fekszik, mely erdői évszázadokon át királyi vadászterületek voltak. The Grassalkovich Palace is one of the largest Hungarian palaces. Its owner, Count Antal Grassalkovich was a typical figure of the regrouping Hungarian aristocracy of the 18th century. The construction began around 1735 under the direction of András Mayerhoffer, a constructor from Salzburg, Austria. After the Grassalkovich family s male line died out in 1841, the Palace had several owners. By the decision of Parliament in 1867 it has become the resting residence of the Hungarian Monarch. This status lasted until 1918. Franz Joseph (1867-1916) and later Charles IV (1916-1918) and the royal family spent several months in Gödöllő every year. It was Empress Elisabeth, who specially loved staying in Gödöllő, where she was always warmly welcomed. During this period the Palace became the symbol of independent Hungarian statehood, and, as a residential centre, political significance has been attached to it. The Palace was converted to Museum by now with multifunctional spaces. Apart from organizing exhibitions it is a venue of theater performances, concerts, balls, etc. A magyarországi kastélyépítészet egyik legjelentősebb, méreteiben is impozáns műemlék együttesének, a Grassalkovich kastélynak építtetője Grassalkovich Antal gróf, a XVIII. században újraformálódó magyar főnemesség jellegzetes alakja. Mayerhoffer András salzburgi építőmester 1735 után kapott a főúrtól megbízást a kastély építésére. A Grassalkovich család férfi ágának kihalása után több tulajdonosa is volt. 1867-ben vásárlás révén a korona javak állományába került és az országgyűlés döntése alapján a mindenkori magyar uralkodó pihenő rezidenciájául jelölték ki. Ez a funkciója 1918-ig maradt meg. Ferenc József (1867-1916), majd IV. Károly (1916-1918), illetve a királyi család, évente hosszú hónapokat időzött Gödöllőn. Különösen Erzsébet királyné tartózkodott szívesen a kastélyban, ahol magyar környezete mély szeretettel vette körül. Ebben a korszakban a kastély az önálló magyar államiság egyik szimbólumává vált, s mint uralkodói rezidencia, komoly politikai jelentőséggel rendelkezett. A kastély ma múzeum, mely kiállításoknak, színházi előadásoknak, koncerteknek, báloknak a helyszíne. 12 26-29. September 2013. 13

Programme 26th September, Thursday 6.00 p. m. The programme will start with a welcome dinner-cruise offering a breathtaking view of the twin-city Buda and Pest. All the beautiful buildings that we will pass by on the banks of the river Danube ranging from the Margaret Bridge until the Frances Joseph Bridge are part of the UNESCO World Heritage. Undoubtedly, the gem of the Danube shore is the Castle District with its fairy-tale like Fishermen s Bastion, the slender spire of the Matthias Church and the huge dome of the former Royal Palace, all of them built in the Middle Ages. We won t miss the very first stone bridge, the Chain bridge and the impressive Parliament building either. Dress code: formal, dark business suit, with Chaîne ribbon 27th September, Friday 10.30 a.m. We organize a whole-day excursion to the countryside by coach. Before leaving Budapest we will see the Heroes Square and the Széchenyi Bath, situated in the City Park. In the morning hours we will visit the largest baroque palace of Hungary, the so-called Grassalkovich Palace, built in the 18th century and located in Gödöllő. The charming little town is within an hour drive on the highway from Budapest. The Palace is an important part of the Hungarian cultural Heritage, having hosted most of the official meetings during the Hungarian EU Presidency. A little walk around the Palace, an unforgettable short concert, strolling in the gorgeous garden and admiring the landscape, while sipping sparkling wine and refreshments will give us a relaxing hour before our departure to the next venue. The Lázár Equestrian Park, owned by the two- and four-in-hand coach driving world champion Lázár brothers, is located in the neighborhood of Gödöllő. In this equestrian paradise we can enjoy a traditional Hungarian horse show, visit the stables and horse stalls, and we can explore the huge park by carriage. Our guests can also see the World Champions Trophy Hall with the carriages and the world- and national championship cups, medals, photos, and watch a short documentary about their most spectacular races. The highlight of the visit is a real gastronomical experience, tasting typical and carefully selected Hungarian country style food with matching wines and enjoying gypsy music. Dress code: Casual with Chaîne ribbon 28th September, Saturday 10.00 a.m. We would like to invite you to a Hungaricum tour, including a short organ recital with Frances Liszt s masterpieces in the Saint Stephen s Cathedral, the largest Catholic church of the city. We will proceed to the Strudel House where you can experience how to prepare the famous Hungarian specialty, the strudel. Our tour will be finished in the 100 year old covered Market Hall, where you can taste the Hungarian Salami, Paprika, Apple and the Tokaji wine specialities all of them renowned as Hungaricums. We will be back at the hotels around 01.00 p.m. Dress code: casual 28th September, Saturday 05.30 p.m. The afternoon will start with the Induction Ceremony followed by the Gala Dinner in the heart of the City. The Wildrose restaurant will host our traditional farewell lunch in a stylish and cosy atmosphere. This place is very popular in Budapest for gourmands, which is well known of its special selection of the Hungarian and international dishes accompanied by high standard wines. Szombat 17.30 A délutáni program avatással kezdődik, majd díszvacsorával folytatódik a város központjában lévő, különlegesen berendezett, rendkívül impozáns Gerbeaud Palotában. Péntek 10.30 Egész napos kirándulás autóbusszal. Mielőtt Budapestet elhagynánk, megtekintjük a Városligetben lévő Hősök terét és a Széchenyi Fürdőt. Egy órás autóbusszal megtett út után először a XVIII. században barokk stílusban épült Grassalkovich kastélyt látogatjuk meg Gödöllőn. A kastély nemzeti örökségünk része, mely 2011. első félévében, amikor Magyarország látta el az Európai Unió soros elnöki teendőit, magas szintű delegációk tárgyalásainak biztosított megfelelő színvonalú helyszínt. A kastély körüli sétát követően egy rövid koncerttel, valamint pezsgős fogadással kiegészített látogatás után indulunk tovább a szomszédos Domonyvölgybe. A többszörös világbajnoki eredménnyel büszkélkedő Lázár testvérek hatalmas lovas parkjában a lovas bemutatót követően megtekintjük az istállókat, a nyertes lovakat és lehetőség lesz sétakocsikázásra is. Ezután megtekintjük a világversenyeken szerzett érmeket, a fotókat, a bemutató filmet, a nyertes fogatokat. A látogatás fő eseményeként gondosan összeállított tipikus magyar ételek és borok kerülnek felszolgálásra, közben cigányzenét élvezhetünk. Öltözet: Sportosan elegáns, Chaîne lánccal Szeptember 29. Vasárnap 11.00 Rövid városnézés keretében megtekintjük a lenyűgöző Parlament belső termeit, lépcsőházát, üléstermét, majd az elegáns és hangulatos Vadrózsa étteremben tartjuk hagyományos búcsú ebédünket. A kulináris élvezeteket keresők körében a Vadrózsa az egyik legnépszerűbb étterem Budapesten, ahol a magyaros és a nemzetközi konyhaművészetből is jól ismert fogásokat, valamint nagyszerű borokat ajánlanak. A program keretében először Liszt Ferenc műveit élvezhetjük egy exkluzív orgonakoncert keretében a legnagyobb budapesti templomban, a Szent István Bazilikában. Utunkat ezután a Rétesház felé vesszük, ahol megismerkedünk egy híres magyar különlegesség, a rétes készítésével, természetesen a kóstoló sem marad el. Programunk utolsó állomása a 100 éves Nagycsarnok, ahol igazi Hungaricumokat is kóstolunk, többek között szalámit, paprikát, almát és Tokaji bort. Kb. 13.00 órára érkezünk vissza a szállodába.
